Makes 20 alfajores.
Ingredients :
1¼ cup cornstarch
½ cup flour
2 tsp baking powder
3 tbsp butter
¼ cup confectioners’ sugar
2 egg yolks
1 tsp lemon peel
2 tbsp milk (or as needed)
¾ to 1 cup manjarblanco (Peruvian caramel)
Preparation:
Sift flour and cornstarch with baking powder. Whip butter with sugar until creamy and fluffy. Add egg yolks, one by one, while beating. Add sifted ingredients and lemon peel.
